It stirs up all the comforting warmth I associate with one of my favorite breakfast pastries — old-fashioned skillet cinnamon rolls — while allowing me to control every ingredient that goes into it. It just doesn’t get any better than that!

Recipe ingredients

  • Half-and-half: Choose regular full-fat half-and-half rather than a fat-free version. It gives the creamer enough body to soften the bitterness of coffee and carry the cinnamon roll flavors without the heavier consistency of cream.

How to make cinnamon roll coffee creamer

Step 1: Add the half-and-half and brown sugar to a small saucepan and warm over low heat, stirring frequently, until the brown sugar has completely dissolved. Keep the mixture below a simmer at this stage; it only needs to become warm enough to dissolve the sugar.

Step 2: Stir in the cinnamon and bring the mixture to a very gentle simmer. Simmer lightly for 2 minutes, stirring frequently. This brief simmer helps the cinnamon distribute more evenly throughout the creamer rather than clumping.

Step 3: Remove the saucepan from the heat and stir in the vanilla extract and butter extract. Adding the extracts after removing the creamer from the heat helps preserve their flavor and aroma. Allow the creamer to cool before transferring it to a container and refrigerating it.

  • Whisk before serving: Ground cinnamon does not fully dissolve in dairy, so some settling is natural as the creamer sits. Give it a good shake or stir before adding it to your coffee.
