I like to treat myself to flavored coffee creamers — they’re so indulgent! I also like to make them myself so I know exactly what’s in them, and somehow that makes them even sweeter. Lately, I’ve been expanding my collection of from-scratch coffee creamer recipes.
It’s great to have a variety of recipes to choose from when I’m in the mood for a steamy treat. This brown sugar version is the latest addition to my creamer repertoire, and it’s quickly making its way to the top of my list of favorites. It’s just so darn good. It gives any coffee shop drink some serious competition.

Recipe ingredients
- Half and half: Gives the brown sugar creamer its creamy texture and enough richness to soften the bitter flavor of coffee without making the creamer overly heavy. Use regular full-fat half and half for the best texture and flavor.
- Brown sugar: Provides the signature sweetness and warm, caramel-like flavor of the creamer. Brown sugar brings more depth than granulated sugar because of its molasses content. Brown sugar from scratch is a great choice for bringing that rich, rounded molasses flavor to the creamer.
- Vanilla extract: Rounds out the brown sugar flavor and adds warmth and depth to the creamer. Use pure vanilla extract for the best flavor rather than imitation vanilla.

How to make brown sugar creamer
Step 1: Pour the half and half into a small saucepan and add the brown sugar. Warm over low heat, stirring frequently, just until the brown sugar is completely dissolved. Keep the heat low; the mixture should warm gently without reaching a simmer.
Step 2: Remove the saucepan from the heat and stir in the vanilla extract until well combined.
Step 3: Allow the brown sugar creamer to cool, then transfer it to a covered container and store it in the refrigerator.
Top tips
- Let the flavors develop: The brown sugar and vanilla flavors become more rounded after the creamer has had time to rest in the refrigerator for a few hours.

Brown Sugar Creamer
Ingredients
- 1 cup half and half
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
