Step 3: Add water and pulse until the dough forms large clumps. Shape into a ball.

Step 4: Transfer to a floured surface, divide in half, and shape into two 6″ squares. Place between parchment sheets and refrigerate for 30 minutes.

Step 5: Roll each square into a 9″ square on a floured surface. Trim edges and slice into 1″ squares.

Step 6: Dock each square by pricking a single hole in the center with a skewer.

  • 1 1/2 cups shredded pepper jack cheese
  • 1 1/2 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter cold
  • 2 tablespoons ice water
  • coarse salt for sprinkling optional

  • Pulse dry ingredients: Add the pepper jack cheese, flour, cornstarch, and salt to a food processor. Pulse until everything is evenly combined.
  • Cut in butter: Drop in the cold butter pieces and process until the mixture looks like coarse sand.
