Homemade Graham Cracker Crust

A homemade graham cracker crust takes only 15 minutes to prepare and requires just 3 simple ingredients. Once you discover how easy it is to make a fresh, buttery graham cracker crust in your own kitchen, those stale, store-bought versions will be a thing of the past.

Graham cracker crust belongs under pie filling

I strive to make everything I can from scratch in my kitchen. And when I discover that a store-bought product contains corn syrup, making my own version moves right up the priority list. That’s certainly the case with graham cracker crust.

Honestly, regardless of whether or not they contain corn syrup, I don’t know why anyone buys them premade. They kind of taste like cardboard. The simple recipe I’m sharing with you today tastes so much better, and it works beautifully for both baked and no-bake desserts. And because you’re making it yourself, you can control how thick the crust is, how far it comes up the sides of the pan, and how firmly it’s packed. Those little details can make a big difference in the finished dessert.

If you love making kitchen staples from scratch as much as I do, be sure to try my flaky homemade pie crust, old-fashioned beef broth, and oat milk from scratch too.

Recipe ingredients

  • Graham crackers: Choose plain graham crackers for their classic flavor and lightly sweetened taste. You can also use honey, cinnamon, or chocolate graham crackers to complement different dessert fillings. They provide the structure of the crust and bring that familiar graham cracker flavor that pairs so well with creamy dessert fillings.
  • Granulated sugar: Adds sweetness and helps the crumbs hold together as the crust sets. You can substitute brown sugar for a richer, slightly caramel-like flavor or use a combination of both. My DIY brown sugar works beautifully in this recipe.
  • Butter: Binds the graham cracker crumbs together and gives the crust its rich, buttery flavor. Good-quality butter makes a noticeable difference in a recipe with so few ingredients. If you enjoy making your own kitchen staples, my from scratch butter is a great choice.

How to make homemade graham cracker crust

Step 1: Preheat your oven to 350°F (177°C). Allow it to come fully to temperature before baking the crust so it bakes evenly and sets properly.

Step 2: Crush the graham crackers into fine, even crumbs using a food processor or by placing them in a sealed plastic bag and crushing them with a rolling pin. Avoid leaving large pieces, as they can make the crust difficult to press together evenly. Transfer the crumbs to a mixing bowl, add the granulated sugar, and stir until thoroughly combined.

Step 3: Melt the butter in a small saucepan over low heat, taking care not to let it brown. Pour it over the graham cracker mixture and use a fork to work it thoroughly into the crumbs. Continue mixing until all the crumbs are evenly coated and the mixture resembles damp sand. It should hold together when gently squeezed between your fingers.

Step 4: Transfer the graham cracker mixture to a 9-inch pie dish. Spread it evenly across the bottom and up the sides, then use the back of a spoon to press the crumbs into a firm, even layer. Pay particular attention to the area where the bottom meets the sides, making sure the crust is well packed without becoming excessively thick in the corners.

Step 5: Place the pie dish in the preheated oven and bake for 5 minutes, until the crust is lightly golden and fragrant. Remove it from the oven and place it on a wire rack to cool completely before adding your filling. This cooling period allows the butter to firm up and helps the crust hold its shape when sliced.

Top tips

  • Avoid overprocessing the crackers: If you’re using a food processor, stop once the crackers are finely crushed. Processing them too long can turn some of the crumbs powdery, producing a denser crust.
  • Don’t grease the pie dish: The butter in the graham cracker mixture provides enough fat to help release the crust. Additional grease can make the finished crust oily.
  • Consider the filling: For a filling that requires additional baking, follow the filling recipe’s directions for preparing the crust. Some baked desserts call for an unbaked graham cracker crust rather than a prebaked one.
  • Use a sharp knife for serving: For cleaner slices, wipe your knife between cuts and use gentle pressure when cutting through the crust. This helps prevent the edges from crumbling as you serve the pie.

Serve

This homemade graham cracker crust is a wonderful foundation for all sorts of desserts. Use it for a classic cheesecake, a tart and creamy key lime pie, or a rich chocolate cream pie. It’s equally delicious filled with banana cream, lemon cream, or a fluffy peanut butter filling. And when fresh strawberries are in season, it’s perfect for a chilled strawberry cream pie.

Graham cracker crust isn’t just for pies, either. It makes a great base for cheesecake bars, including my cranberry cheesecake bars, which are a lovely addition to a holiday dessert table. You can also pair it with a pumpkin cheesecake filling for a fall dessert or use it for a refreshing no-bake treat during the warmer months.
