Make taco layer dip spooky

One of my favorite things to do in the kitchen is make holiday-themed dishes. My very favorite thing to do in the kitchen is create craveworthy food to treat friends and family. This spooky spider web dip checks both of those boxes with its creepy-crawly appeal.

It’s quick and easy to put together, making it great for entertaining without spending more time in the kitchen than you do with your guests. And if you want to serve it any other time of year, just leave the web and spider off the top and you’re good to go. It’s a recipe you’ll find yourself serving at gatherings all year long.

Recipe ingredients

  • Refried beans: Creates a rich, savory first layer and brings the classic flavor and creamy texture you expect in a Mexican-style layered dip. Choose your favorite refried beans for the flavor you like best.
  • Diced tomatoes with green chilis: Adds juicy tomato flavor and a little heat to the base layer.
  • Taco seasoning: Brings the familiar blend of savory, earthy, and mildly spicy Mexican-inspired flavors to the dip. My DIY taco seasoning blend is an easy way to make your own from scratch.
  • Avocados: Choose ripe avocados that yield slightly when gently pressed so they mash easily and have the best creamy texture. For even more flavor in this layer, substitute simple homemade guacamole for the avocados.
  • Lime: Freshly squeezed lime juice brightens the avocado layer and adds acidity that cuts through the richer ingredients. Avoid bottled lime juice, which doesn’t have the same fresh flavor.
  • Sour cream: Adds a cool, creamy layer and is also used to create the contrasting spider web on top of the dip. Full-fat sour cream gives you the richest flavor and a thick consistency that holds the web design well.
  • Cheddar cheese: Adds a savory, cheesy layer and provides a colorful background that makes the sour cream spider web easy to see. You can use any cheese you like, but avoid white cheese or the spider web won’t stand out against it.
  • Black olive: A single black olive is all you need to make the spider that sits on the web. You can substitute a small plastic spider for the olive, but make sure guests know it isn’t edible and keep a close eye on young children to prevent a choking hazard.

How to make spider web dip

Step 1: Combine the drained refried beans, diced tomatoes with their juice, and taco seasoning in a bowl. Use a fork to break up the refried beans and mix until evenly combined. Spread the mixture evenly across the bottom of a 10-inch pie dish.

Step 2: Combine the mashed avocado, freshly squeezed lime juice, granulated garlic, and salt until well blended. Gently spread the avocado mixture evenly over the bean layer.

Step 3: Whisk the sour cream until smooth and easy to spread. Gently spread it over the avocado, working carefully to keep the layers from blending together.

Step 4: Evenly distribute the finely shredded cheese over the sour cream, covering the surface from edge to edge.

Step 5: Toss the diced tomatoes and chopped scallions together. Arrange the mixture around the outer edge of the pie dish to create a ring around the dip, leaving the center open for the spider web.

Step 6: Transfer the sour cream to a piping bag fitted with a small round tip. Pipe one vertical line and one horizontal line across the cheese to make a plus sign and divide the surface into four sections. Add two diagonal lines across those sections to create a total of eight sections. Starting along the outer edge of the web, pipe connecting lines between each section, letting the center of each line dip slightly inward toward the middle of the web. Continue working inward with progressively smaller connecting lines until the spider web is complete.

Step 7: Cut one black olive in half lengthwise. Place one half cut-side down on the spider web for the body. Cut the remaining olive half crosswise into six thin, curved strips. Arrange three strips on each side of the body to form the legs, angling them slightly outward.

Top tips

  • Build the layers with dollops: When adding one layer over another, distribute small dollops across the entire surface before spreading. This requires much less movement than placing everything in the center and pushing it outward, helping keep the layers distinct instead of blending them together.
  • Keep the avocado layer covered: It may be tempting to rearrange the layers and put the avocado directly beneath the spider web for the green Halloween color, but exposed avocado will begin to brown fairly quickly, even with lime juice mixed into it. Keeping it beneath the sour cream and cheese helps protect it from air and preserves its color longer.
  • Try pico de gallo around the edge: Substitute homemade pico de gallo salsa for the diced tomato mixture to add another layer of fresh flavor. Replace the onions called for in the pico with scallions to maintain the look of the original tomato and scallion ring.
  • No piping bag needed: A small plastic food-storage bag works well for piping the spider web. Spoon in the sour cream, push it toward one bottom corner, and snip off a small piece of the corner to create an easy disposable piping bag.
  • Keep it chilled for longer serving: Don’t leave spider web dip at room temperature for more than 2 hours, or 1 hour when the temperature is above 90°F (32°C). For a longer party or buffet, set the pie dish over a larger dish or tray filled with ice to keep the dip cold, replenishing the ice as needed.
  • Make a smaller batch: If you don’t expect the entire dip to be eaten when you serve it, halve the recipe. The avocado layer doesn’t store particularly well, so making only what you expect to use gives you the best flavor, color, and texture without having to store a large amount of leftover dip.
  • Store leftovers with the avocado protected: Cover the dish tightly and refrigerate any leftover spider web dip promptly. Avoid disturbing the layers more than necessary so the avocado remains covered by the sour cream and cheese, limiting its exposure to air and to slow browning.

Serve

Tortilla chips are a natural choice for scooping up all those Mexican-style layers. Serve your favorite tortilla chips, or put out blue corn tortilla chips if you want to add more color to your Halloween spread.

For a homemade option, try homemade savory crackers, pepper jack crackers from scratch, or everything crackers made from scratch. You can even cut homemade crackers into bats, ghosts, pumpkins, or other spooky shapes before baking them for a fun Halloween touch. Bell pepper strips, celery sticks, carrot sticks, cucumber slices, and mini sweet peppers are great for adding fresh, crunchy dippers to the platter too.

Turn the dip into part of a larger Halloween appetizer spread with my from scratch pumpkin cheese ball and black olive spider pizza. And for a sweet finish that keeps the Halloween theme going, add a batch of old fashioned peanut butter candy apples to the party table.

  • 1/4 teaspoon salt
  • 1 1/2 cups sour cream more for web
  • 2 cups finely shredded cheddar cheese
  • 3/4 cup diced roma tomatoes
  • 1/3 cup chopped scallions
  • 1 extra large black olive for spider

Instructions

  • Combine the drained refried beans, diced tomatoes with their juice, and taco seasoning in a bowl, using a fork to break up the beans. Spread evenly in the bottom of a 10-inch pie dish.
  • Combine the mashed avocado, freshly squeezed lime juice, granulated garlic, and salt. Spread evenly over the bean layer.
  • Whisk the sour cream until smooth and spreadable. Spread evenly over the avocado layer.
  • Sprinkle the finely shredded cheddar cheese evenly over the sour cream layer.
  • Transfer the sour cream for the spider web to a piping bag fitted with a round tip. Pipe one vertical and one horizontal line across the cheese to make a plus sign and divide the surface into four sections. Add two diagonal lines across those sections to create a total of eight sections.
  • Starting along the outer edge of the web, pipe connecting lines between each section, letting the center of each line dip slightly inward toward the middle of the web. Continue working inward with progressively smaller connecting lines until the spider web is complete.
  • Cut one black olive in half lengthwise and place one half cut-side down on the web for the spider’s body. Cut the remaining half crosswise into six thin, curved strips. Arrange three strips on each side of the body to make the legs.

Notes

  • Dollop each layer evenly over the previous layer before spreading to help keep the layers from blending together.
  • Keep the avocado layer covered by the sour cream and cheese, when storing leftovers, to slow browning.
  • If you expect leftovers, consider halving the recipe since the avocado layer is best enjoyed fresh.
  • Refrigerate leftovers tightly covered. Do not leave the dip at room temperature for more than 2 hours, or 1 hour above 90°F (32°C). For longer serving, keep the dish chilled over ice.
