Sweet Potato Quesadilla
This sweet potato quesadilla recipe combines tender roasted sweet potatoes, melted Monterey Jack cheese, and warm smoky seasonings inside a crispy, golden tortilla. It’s a hearty appetizer, easy lunch, simple dinner, or meatless meal that delivers plenty of savory flavor in every bite.

Turn sweet potatoes into a savory quesadilla
When I found myself with leftover roasted sweet potatoes and tortilla shells in the refrigerator, the only thing I could do was make a savory sweet potato quesadilla appetizer. I got to work shredding some Monterey Jack cheese, sautéing a little onion, and rinsing some black beans. Before I knew it, I was biting into one of the best quesadillas I’d ever had.
This recipe is perfect for sweet potato lovers and vegetarians alike, but it definitely doesn’t leave meat lovers behind. It’s so satisfying they won’t even miss the meat. Roasting the sweet potato gives it a rich, slightly caramelized flavor that turns a few simple ingredients into something special. Every bite is hearty, satisfying, and comes together with very little effort.

Recipe ingredients
- Sweet potato: Choose a firm sweet potato with smooth, unblemished skin and no soft spots or sprouts. Roasting brings out its natural sweetness and creates the hearty base of the filling while pairing beautifully with the smoky seasonings.
- Monterey Jack cheese: Freshly shredded Monterey Jack melts smoothly and creates the gooey, cheesy filling that holds the roasted sweet potatoes and other ingredients together. For the best texture, shred it yourself instead of using pre-shredded cheese.
- Tortilla shells: Large 12-inch burrito-size tortillas give you plenty of room for the filling and fold easily without tearing. They also brown evenly, creating a crisp, golden exterior while keeping the filling tucked neatly inside. How to make a sweet potato quesadilla
Step 1: Heat the olive oil in a large skillet over medium heat. Add the sliced onion and cook, stirring occasionally, until soft, golden brown, and caramelized.
Step 2: Stir the black beans and pressed garlic into the skillet. Cook for 1 to 2 minutes, stirring frequently, until the garlic is fragrant.
Step 3: Add the roasted sweet potato to the skillet. Sprinkle the salt and ground cumin over the top, then gently stir until the filling is evenly combined and heated through.
Step 4: Butter one side of one tortilla. Place it butter-side down in a hot skillet over medium heat.

Step 5: Sprinkle half of the Monterey Jack cheese evenly over the entire tortilla. Spoon half of the sweet potato mixture over one half of the tortilla, leaving the other half covered with cheese only.
Step 6: Cook until the bottom of the tortilla is crisp and golden brown and the cheese begins to melt. Fold the cheese-only half of the tortilla over the sweet potato filling and gently press with a spatula. Continue cooking until the cheese is fully melted, then transfer the quesadilla to a cutting board.
Step 7: Repeat with the remaining tortilla, butter, cheese, and sweet potato filling.
Step 8: Let the quesadillas rest for 1 to 2 minutes, then cut each into 4 wedges and serve hot.
Top tips
- Roast the sweet potato ahead: If you’re planning to make these quesadillas for lunch or a quick weeknight dinner, roast the sweet potato a day or two in advance and refrigerate it until you’re ready to use it. Having it already cooked cuts the prep time significantly and makes assembling the quesadillas fast and easy.
- Don’t overcrowd the onion. Spread the onion into an even layer in the skillet and stir only occasionally. Giving it plenty of contact with the pan develops better color and sweeter flavor.
- Spread filling evenly: Avoid piling the filling too high in the center. An even layer allows the quesadilla to cook evenly, makes it easier to fold, and helps the cheese hold everything together.
- Use medium heat: Cooking too quickly can brown the tortilla before the cheese has fully melted. Medium heat gives the tortilla time to become crisp and golden without burning.
- Wipe the skillet clean: If any melted cheese or browned bits remain in the pan, carefully wipe them away before cooking the second quesadilla. This helps it to brown evenly without scorching.
- Use a pizza cutter. A pizza cutter glides through the crisp tortilla more cleanly than a knife, keeping the filling neatly in place and creating evenly sized wedges.
Serve
This sweet, savory quesadilla is delicious served with classic toppings like sour cream and salsa. When garden-fresh tomatoes are in season, I like to swap the jarred salsa for a simple tomato pico de gallo. - 2 cups shredded Monterey jack cheese
