Vanilla Simple Syrup
Vanilla simple syrup is an easy homemade sweetener that adds rich vanilla flavor to coffee, tea, cocktails, homemade sodas, lemonade, and desserts. Made with just three ingredients, it comes together in minutes and keeps well in the refrigerator, making it an easy staple to keep on hand.

Turn vanilla bean paste into sweet syrup
The first time I ever used vanilla simple syrup was while making a cake with a friend in her kitchen. She brushed it over the cake layers before frosting them, and I was amazed by the difference it made. She made the syrup with vanilla bean paste, which I had never used before. The flavor was so rich that I bought a jar for myself, and I’ve been making vanilla simple syrup that way ever since.
This syrup has a way of disappearing much faster than you’d expect. I always make a little extra because I’m always finding more ways to use it in my kitchen. Making it myself means I can use real vanilla bean paste and enjoy a much richer vanilla flavor than most bottled syrups have. I rarely have a jar in the refrigerator for very long before it’s empty.
Whether you’re baking for a special occasion or just looking for an easy way to add homemade flavor to everyday recipes, it’s worth keeping on hand. Once you’ve made this one, be sure to try my ginger simple syrup, pear syrup from scratch, and homemade grape syrup. They’re just as easy to make and just as versatile in the kitchen.
Recipe ingredients
- Water: Water forms the base of the syrup, dissolving the sugar into a smooth consistency that blends easily into drinks and desserts. Use fresh, good-tasting water because any off flavors will carry through to the finished syrup. If your tap water has a noticeable chlorine taste, bottled spring water is the better choice.
- Vanilla bean paste: Choose a high-quality vanilla bean paste made with real vanilla beans for the richest flavor. It gives the syrup a deeper, more complex vanilla taste than most extracts while adding the tiny vanilla bean flecks that make homemade vanilla syrup look as good as it tastes.
- Sugar: Granulated sugar creates the classic body and sweetness of a traditional simple syrup without competing with the vanilla. Organic cane sugar is an excellent choice if you prefer minimally processed ingredients, but regular white sugar also produces a clear syrup with a clean vanilla flavor.

How to make vanilla simple syrup
Step 1: Combine the water and granulated sugar in a small saucepan. Cook over medium heat, stirring occasionally, just until the sugar has completely dissolved and the syrup is clear. Avoid a rolling boil, which isn’t necessary and can reduce the fresh vanilla flavor you’ll add in the next step.
Step 2: Remove the saucepan from the heat and whisk in the vanilla bean paste until it is completely dissolved and evenly distributed throughout the syrup. Adding it off the heat preserves its rich aroma while ensuring the vanilla bean flecks are evenly dispersed.
Step 3: Let the syrup cool completely to room temperature. Cooling allows the vanilla flavor to fully develop before bottling and prevents condensation from forming inside the storage container.
Step 4: Pour the cooled syrup into a clean glass jar or bottle with a tight-fitting lid. The vanilla bean flecks are a hallmark of real vanilla bean paste, so leave them in the syrup for the best flavor and appearance.
Step 5: Store the syrup in the refrigerator for up to 1 month. Give the jar a quick shake or stir before each use if the vanilla bean flecks settle during storage.
Top tips
- Make a double batch:. Vanilla simple syrup keeps well in the refrigerator, so making extra saves time and ensures you always have it on hand for coffee, tea, cocktails, lemonade, and baking.
- Date the jar: Homemade simple syrup doesn’t contain preservatives, so dating the jar makes it easy to use it while the flavor is at its freshest.
- Taste before bottling: Once the syrup has cooled slightly, taste it. If you’d like a stronger vanilla flavor, whisk in a little more vanilla bean paste while it’s still warm until it tastes just right.
- Store in a bottle that’s easy to pour: A glass bottle or food-safe squeeze bottle makes it easy to measure and drizzle the syrup without sticky spills, especially if you use it in drinks every day.
Serving ideas
Vanilla simple syrup is one of those kitchen staples that adds rich vanilla flavor anywhere you want a little sweetness. Because the sugar is fully dissolved, the syrup blends instantly into both hot and cold recipes without leaving any grainy sugar behind.
Stir it into hot coffee, cold brew coffee, homemade iced coffee, spiced chai cacao, black tea, herbal tea, or classic homemade lemonade for smooth sweetness and rich vanilla flavor. It’s also delicious in my fresh squeezed orangeade and Arnold Palmer drink.
It makes an excellent finishing syrup for baked goods and desserts too. Brush a light layer over cake layers before frosting to add moisture and extra vanilla flavor, especially in my vanilla caramel cake from scratch, homemade lemon crunch cake, and sweet potato spice cake. You can also drizzle it over vanilla ice cream, fresh berries, or small batch blueberry compote just before serving.
For breakfast, try it in place of maple syrup on homemade farmhouse pancakes, Belgian waffles from scratch, or cinnamon French toast. It also stirs beautifully into plain yogurt, warm oatmeal, or homemade vanilla pudding whenever you want a little extra vanilla flavor.

Vanilla Simply Syrup
Ingredients
- 2/3 cup water
- 2/3 cup granulated sugar
- 2 teaspoons vanilla bean paste
Instructions
- Combine the water and sugar in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar is completely dissolved, about 3 minutes. Do not let the syrup boil.
- Remove the saucepan from the heat and whisk in the vanilla bean paste until evenly combined.
- Let the syrup cool completely, then transfer it to a clean glass jar or bottle with a tight-fitting lid.
- Refrigerate until ready to use. The syrup will keep for up to 1 month in the refrigerator.
Notes
- Heat the syrup only until the sugar has dissolved. Avoid boiling, which can reduce the yield and make the syrup thicker than intended.
- Whisk the vanilla bean paste into the hot syrup after removing the saucepan from the heat to preserve its rich flavor.
- The vanilla bean specks naturally settle during storage. Give the bottle or jar a gentle shake before each use to redistribute them.
- Double or triple the recipe if you use vanilla simple syrup often. It keeps well in the refrigerator for drinks, desserts, and baking.
