Sausage and Egg Grilled Cheese Sandwich

This sausage and egg grilled cheese sandwich takes all the ingredients of a classic breakfast sandwich and turns them into a crunchy, flavorful grilled cheese. Crisp, buttery bread with melted cheese, savory breakfast sausage and two fresh over hard eggs come together for a satisfying breakfast.

When breakfast meets grilled cheese

This sausage and egg grilled cheese sandwich brings two favorites together in one place — the classic breakfast sandwich and the classic grilled cheese. It uses the same ingredients you’d expect to find in both of those sandwiches — layering them all together to make a truly craveworthy breakfast.

Recipe ingredients

  • Eggs: Farm fresh eggs are recommended for their rich, robust flavor, but any eggs you have on hand will work just fine for this sandwich. They are cooked over hard in this recipe, but you can prepare them however you prefer. Use my diner style eggs guide to cook them exactly the way you like every time.
  • Breakfast sausage: Loose breakfast sausage works best because it can be formed to fit the bread perfectly, but any variety can be used — links or patties both work, just arrange them to fit the sandwich when layering it together.
  • American cheese: American cheese is the classic choice for it’s melt and coverage, but any cheese you like can be used depending on your preference.

How to make a sausage and egg grilled cheese sandwich

Step 1: Form a thin patty from the breakfast sausage, keeping it close to the size and shape of your bread so it fits the sandwich evenly. Cook it in a skillet over medium heat until fully cooked through, then transfer it to a plate and set aside.

Step 2: Heat olive oil in a clean skillet over medium-low heat and crack the egg into the pan. Break the yolk and let it spread into the whites so the egg cooks in a flat, even layer.

Step 3: Once the bottom is set, flip the egg and continue cooking until both sides are fully set with no runny areas. Remove from the skillet and set aside.

Step 4: Butter one side of each slice of bread and place them butter side down in the same skillet over medium-low heat.

Step 5: Place two slices of cheese on each piece of bread. On one slice, layer the sausage patty and cooked egg directly over the cheese.

Step 6: Cook until the bread is golden brown and the cheese has melted, then close the sandwich and remove from the skillet.

Top tips

Ingredients

  • 4 ounces loose breakfast sausage
  • 1 tablespoon olive oil
  • 2 large eggs
  • 2 slices artisan style bread any variety
  • 2 tablespoons butter
  • 4 slices American cheese

Instructions

  • Form loose breakfast sausage into a thin patty sized to your bread. Cook in a skillet over medium heat until fully cooked through. Remove and set aside.
  • Heat a small amount of olive oil in a skillet over medium-low heat. Crack eggs into the skillet, break the yolks, and cook until the bottoms are set.
  • Flip and cook until fully set with no runny areas. Remove and set aside.
  • Butter one side of each slice of bread. Place bread butter side down in the skillet.
  • Add two slices of cheese to each slice. On one slice, layer the sausage patty and cooked eggs over the cheese.
  • Cook until the bread is golden brown and the cheese has melted. Close the sandwich, remove from the skillet, and serve.
