These beautiful holiday dessert bars deliver everything you love about homemade cheesecake in easy-to-serve squares, making them a great choice for Thanksgiving, Christmas, and holiday entertaining.

Cranberries and cheesecake filling make the perfect bars
Dessert bars are a great way to bring a sweet treat to the table. And making them with creamy cheesecake filling and a homemade cranberry topping is one of my favorite ways to do it. These cranberry cheesecake bars are a hit every time I serve them.
This recipe is surprisingly easy to make. It takes a little time to put everything together, but there’s nothing difficult about the process. You can even make the bars a day or two ahead, which makes them a great choice for Thanksgiving, Christmas, or any gathering where you want to serve a homemade dessert.
If you love bringing homemade desserts to the table as much as I do, be sure to give my pear upside down cake from scratch, apple pie with vanilla custard, and homemade vanilla caramel cake a try too.
Recipe ingredients
- Graham Crackers: Choose classic graham crackers for their lightly sweet flavor. They provide the base for the crust and add a pleasant contrast in texture to the creamy cheesecake filling. You can also use honey, cinnamon, or chocolate graham crackers to complement different dessert fillings.
- Butter: Butter gives the graham cracker crust its rich flavor and helps hold the crumbs together. My old-fashioned homemade butter is a great choice for this recipe.
- Cream Cheese: Full-fat, brick-style cream cheese is the best choice for a rich, creamy cheesecake filling that holds its shape when sliced. Avoid whipped or spreadable cream cheese, which can affect the texture and consistency of the bars.
- Vanilla Extract: Pure vanilla extract adds warmth and depth to both the cheesecake filling and the cranberry compote. Its mellow sweetness complements the tangy cream cheese and tart cranberries.
- Oranges: Fresh orange zest brings a bright citrus flavor to both the cheesecake filling and cranberry compote, while the juice adds sweetness and acidity to the compote. I like to use clementines when I make this recipe for the holidays because they’re in season and have a lovely, sweet citrus flavor.
- Fresh Cranberries: Choose firm, plump cranberries with a deep red color, and discard any that are soft or shriveled. Their naturally tart flavor balances the richness of the cheesecake and gives the homemade compote its beautiful ruby-red color.

How to make cranberry cheesecake bars
Make the graham cracker crust:
Step 1: Set your oven to 350°F (177°C). Starting with a fully preheated oven helps the crust bake evenly and develop a lightly toasted flavor.
Step 2: Crush the graham crackers into fine, uniform crumbs. A food processor works well for this, but you can also crush them in a sealed bag with a rolling pin. Avoid leaving large pieces, which can make the finished crust difficult to slice neatly.
Step 3: Transfer the crumbs to a mixing bowl and stir in the granulated sugar. Melt the butter in a small saucepan over low heat, then pour it over the crumbs. Mix thoroughly with a fork until the butter is evenly distributed and the mixture resembles damp sand.
Step 4: Spread the mixture evenly across the bottom of an 8×8 metal baking dish. Use the back of a spoon to press the crumbs into a firm, even layer. Apply enough pressure to compact the crust without pressing so hard that it becomes excessively dense.
Step 5: Bake the crust for 5 minutes, then transfer the baking dish to a wire rack. Allow it to cool completely before adding the filling. Prebaking helps bind the crumbs together and keeps the crust from breaking apart when the filling is poured over the top of it.
Make the cranberry compote:
Step 1: Place the fresh cranberries and granulated sugar in a saucepan. Zest half an orange directly into the saucepan, then squeeze in the juice from that same half. The zest adds concentrated citrus flavor, while the juice provides added orange flavor and liquid to help the cranberries cook down into a compote.
Step 2: Place the saucepan over medium heat and bring the ingredients to a boil, stirring occasionally. As the mixture heats, the sugar will dissolve into the orange juice and the cranberries will begin to soften.
Step 3: Reduce the heat and simmer for 5–7 minutes, stirring occasionally. The cranberries will burst as they cook, releasing their juices and naturally thickening the compote. Look for a thick, spoonable consistency that will hold its shape when placed on the cheesecake batter. Keep in mind that the compote will thicken further as it cools.
Step 4: Remove the saucepan from the heat and stir in the vanilla extract. Adding it after cooking preserves more of its delicate flavor and aroma.
Step 5: Allow the cranberry compote to cool before assembling the cheesecake bars. Cooling gives it time to thicken and makes it easier to create distinct cranberry swirls without the compote spreading excessively into the cheesecake filling.

Make the cheesecake filling:
Step 1: Place the cream cheese and granulated sugar in a mixing bowl. Beat until smooth and creamy, scraping down the sides and bottom of the bowl as needed. Take the time to eliminate any lumps at this stage, as they become harder to remove once the liquid ingredients are added.
Step 2: Add the half-and-half, egg, vanilla extract, salt, and zest from the remaining orange. Blend on low speed until the batter is smooth and the ingredients are fully incorporated. Avoid overmixing, which can introduce excess air and cause the cheesecake to puff up during baking and crack as it cools.
Assemble and bake the bars:
Step 1: Pour the cheesecake batter over the completely cooled graham cracker crust. Gently spread it into an even layer, making sure it reaches the edges and corners of the baking dish.
Step 2: Place small spoonfuls of the cooled cranberry compote across the surface of the cheesecake filling. Run a chopstick or the tip of a knife through the compote in gentle, sweeping motions to create a marbled appearance. Resist the temptation to make too many passes, or the colors will blend together rather than form distinct swirls.
Step 3: Place the baking dish in a preheated 350°F (177°C) oven and bake for 35-40 minutes. The edges should be set, while the center should barely jiggle when the dish is gently moved. Don’t wait until the entire surface is completely firm. The residual heat will continue to set the center as the cheesecake cools.
Step 4: Remove the cheesecake from the oven and place the baking dish on a wire rack to cool. Allowing air to circulate beneath the dish helps the cheesecake cool more evenly.
Step 5: Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight. This chilling period is essential for developing the firm, creamy texture needed for clean slices. Use a sharp knife to cut the cheesecake into bars, wiping the blade between cuts to keep the edges neat and the cranberry swirls looking their best.
Top tips
- Use a metal baking dish: A light-colored metal baking dish provides more even heat distribution than glass, helping the cheesecake bake consistently without overcooking the edges.
- Line the baking dish: Line the baking dish with parchment paper, leaving enough overhang on two sides to lift the chilled cheesecake out in one piece. This makes it easier to cut the bars into uniform squares.
- Avoid opening the oven: Keep the oven door closed for most of the baking time. Sudden temperature changes can cause the cheesecake to sink or develop cracks.
- Cut smaller portions: Cheesecake is rich, so smaller squares are often ideal, particularly when serving the bars as part of a holiday dessert spread.
- Keep the bars refrigerated: Store the cheesecake bars in an airtight container in the refrigerator for up to 4 days. For the best texture, keep them chilled until shortly before serving.
- Freeze for later: Chill the cheesecake bars completely, then arrange them in a single layer on a parchment-lined baking sheet and freeze until firm. Transfer to an airtight, freezer-safe container, separating layers with parchment paper. Freeze for up to 2 months and thaw overnight in the refrigerator before serving.
Serve
Cranberry cheesecake bars are delicious served chilled, straight from the refrigerator. For a little extra indulgence, add a dollop of homemade whipped cream or garnish them with old-fashioned candied citrus slices.
A cup of freshly brewed coffee or espresso is a wonderful companion to these rich, creamy bars. These cheesecake bars make a beautiful addition to a holiday dessert platter.
