Classic Hot Roast Beef Sandwich with Homemade Gravy

A hot roast beef sandwich is a classic diner favorite made with tender deli-style roast beef served over thick slices of bread and covered in rich, savory brown gravy. This easy homemade version comes together in just 20 minutes while delivering all the comforting flavor of the old-fashioned diner classic.

Open-faced roast beef just like the diner makes

I remember the days when open-faced sandwiches were flying out of the kitchen by the dozens on busy weekend afternoons at the local diners where I worked. They were one of the most popular items on the menu. The servers loved them because they knew they’d be on the table in just a few minutes. The cooks loved them because they were so darn easy to make. And the customers loved them because they were warm, filling, and absolutely delicious.

Even though you don’t see hot roast beef sandwiches on many diner menus anymore, they’re the kind of comfort food that never really goes out of style. They’re inexpensive to make, quick enough for an easy weeknight dinner, and hearty enough to satisfy the biggest appetites. If you’re craving an old-fashioned diner favorite, this recipe delivers all the rich, comforting flavor you remember from years ago.

Recipe ingredients

  • Sandwich bread: Soft white sandwich bread is the traditional choice for an old-fashioned hot roast beef sandwich. Its mild flavor keeps the focus on the beef and gravy, while the soft crumb absorbs the gravy. To switch it up, try Dutch oven semolina bread, artisan rye bread from scratch, or easy rustic whole wheat bread.
  • Roast beef: Sliced deli roast beef is the traditional choice for a classic hot roast beef sandwich because it’s fully cooked, tender, and heats quickly in the gravy. Choose a high-quality roast beef with minimal added ingredients for the best flavor.
  • Butter: Butter is combined with flour to make the roux that thickens the gravy and gives it a rich, silky texture. If you enjoy making pantry staples from scratch, old-fashioned homemade butter works beautifully in this recipe.
  • Beef bouillon: Beef bouillon provides the savory beef base for the gravy, so choose one with a rich, full beef flavor. Better Than Bouillon Roasted Beef Base is recommended because it delivers a deeper, more robust beef flavor than cubes or powdered bouillon. If you like keeping homemade staples in your freezer, my simple homemade beef broth is perfect for recipes like this and adds incredible flavor to the gravy.

How to make a hot roast beef sandwich

Step 1: In a measuring cup or bowl, dissolve the beef bouillon in the water. Set aside.

Step 2: Melt the butter in a large skillet over medium heat. Sprinkle the flour over the melted butter, whisking constantly until a smooth paste forms. Cook for 1 minute, continuing to whisk so the roux cooks evenly without browning.

Step 3: Slowly pour the prepared beef bouillon into the skillet while whisking constantly to keep the gravy smooth and free of lumps.

Step 4: Whisk in the onion powder and granulated garlic. Continue cooking over medium heat, whisking frequently, until the gravy thickens enough to coat the back of a spoon.

Step 5: Add the sliced roast beef to the gravy and gently stir to coat each piece. Cook for 2 to 3 minutes, or until the beef is heated through.

Step 6: Cut each slice of bread in half. Arrange four bread halves on each of two serving plates, slightly overlapping them to create a base for the beef and gravy.

Step 7: Divide the hot roast beef evenly between the two plates, layering it over the bread. Spoon the gravy generously over the beef and bread, then serve immediately while hot.

Top tips

  • Whisk gravy continuously: Constant whisking creates a silky, lump-free gravy and helps it thicken evenly without sticking to the bottom of the skillet.
  • Adjust gravy before serving: If it becomes thicker than you’d like, whisk in a splash of hot water or beef broth until it reaches your preferred consistency. A smooth, pourable gravy coats the beef and bread more evenly.
  • Don’t boil the roast beef: Deli roast beef is already fully cooked, so it only needs a few minutes in the gravy to heat through. Boiling it can make it tough.
  • Serve immediately: This sandwich is at its best as soon as it’s assembled, while the beef is hot, the gravy is smooth, and the bread is just beginning to soak up the rich gravy without becoming overly soft.

Serve

If you want the full diner experience, serve your hot roast beef sandwich with mashed potatoes or fresh-cut french fries. In many diners, both the sandwich and the potatoes or fries were covered with brown gravy, so it’s worth making a little extra if that’s how you like it.

A generous scoop of old-fashioned creamy coleslaw is another classic pairing. The cool, creamy slaw is a welcome contrast to the hot beef and rich gravy, making every bite a little more balanced.

For a homemade dinner, you have plenty of other great options. Crispy Asiago potato wedges or classic potato salad are always a good choice, while Southern-style stewed green beans, oven roasted honey balsamic carrots, buttered corn, or roasted Brussels sprouts round out the plate beautifully. If you enjoy a sweet side with savory meals, homemade caramel applesauce is a classic addition that pairs especially well with roast beef.
