Cheesy homemade alfredo makes everything better
I bought a jar of Alfredo sauce many years ago when they first hit supermarket shelves. It was the only jar I ever bought. As far as I’m concerned, it tasted like someone had whipped together disappointment, poured it into a jar, and set it on a grocery store shelf for sale.
This oh-so-indulgent, velvety smooth sauce is a make-from-scratch must. There’s just no other way. Fortunately, making it is almost as easy as opening a jar. Butter, cream, fresh garlic, and Parmesan come together to create a savory sauce with the kind of rich flavor you simply can’t get without a saucepan.
This recipe delivers far more than the effort it takes to make. It’s the kind of dependable homemade sauce you’ll reach for again and again.

Recipe ingredients
- Butter: Use good-quality butter for the richest flavor and smoothest sauce. My from scratch farmhouse butter is an excellent choice. Butter creates the flavorful base of the Alfredo sauce and adds richness.
- Heavy cream: Use full-fat heavy cream for a rich, velvety Alfredo sauce. Its higher fat content gives the sauce body and allows it to thicken quickly as it simmers, creating a luscious consistency without the longer reduction required when using milk or half-and-half.
- White pepper: White pepper adds a gentle heat and distinctive earthy flavor that balances the richness of the butter, cream, and Parmesan.
- Parmesan cheese: Use freshly grated Parmesan cheese for the best flavor and smoothest texture. Parmesan provides the distinctive savory, nutty flavor of Alfredo sauce while also helping thicken the sauce as it melts.

How to make homemade alfredo sauce
Step 1: Add the butter and heavy cream to a saucepan and bring them to a very low simmer over medium-low heat. Simmer for 2 minutes, stirring frequently. Keep the heat gentle; the cream should be softly bubbling, not boiling.
Step 2: Whisk in the pressed garlic, salt, and white pepper. Continue at a very low simmer for 1 minute, whisking frequently to distribute them throughout the sauce.
Step 3: Reduce the heat to low. Whisk in the freshly grated Parmesan 1/2 cup at a time, allowing each addition to melt completely before adding the next. Keep the heat low and whisk gently until the sauce is smooth and creamy.
Step 4: Remove the Alfredo sauce from the heat as soon as the Parmesan is fully melted. Serve immediately while the sauce is hot, silky, and at its creamiest.
Top tips
- Grate finely: A fine grate gives the Parmesan more surface area, helping it incorporate into the sauce easily and evenly.
- Bring to room temperature: Very cold Parmesan can cool the cream rapidly when added. Taking it out of the refrigerator before you start cooking helps it incorporate more readily.
- Use a heavy-bottomed saucepan: It distributes heat more evenly and reduces hot spots, giving you better control over a cream-based sauce.
- Keep it slightly loose: Alfredo sauce continues to thicken as it cools, so taking it off the heat while it is still a little loose gives you a better consistency by the time it reaches the plate.
- Make only what you need: Alfredo sauce does not store particularly well in the refrigerator and is not a good candidate for freezing. The sauce can separate and lose its smooth, creamy texture when chilled and reheated, so adjust the recipe to make the amount you plan to serve rather than planning on leftovers.
Serve
The rich, creamy flavor of homemade Alfredo sauce makes it an easy match for pasta, meat, vegetables, and freshly baked bread.
