Older folks still order them because they’re comforting, satisfying, and every bit as delicious as they were decades ago. I still make both versions at home, and today I’m sharing my quick, from-scratch hot hamburger sandwich recipe with you, so you can enjoy this old-fashioned diner favorite at your own table.

Recipe ingredients
- Hamburger: Choose organic, grass-fed ground beef whenever possible for the richest beef flavor and a juicy, tender hamburger patty. An 80/20 blend provides enough fat to keep the patties moist while developing a flavorful browned crust.
- Sandwich bread: Soft white sandwich bread is the traditional choice for a classic hot hamburger sandwich. Its light, tender texture lets the juicy hamburger patty and rich brown gravy remain the stars of the meal. If you’d like to change things up, try serving it on semolina bread from scratch, traditional caraway rye bread, or homemade whole wheat artisan bread for a different flavor and texture.
- Butter: Butter adds richness to the brown gravy and combines with the flour to create the roux that gives the gravy its smooth, velvety texture. If you enjoy making dairy products at home, my from scratch farmhouse butter is an excellent choice.
- Beef bouillon: I recommend Better Than Bouillon because it delivers deep, roasted beef flavor that tastes much closer to homemade stock than most bouillon cubes or powders. How to make a hot hamburger sandwich
Step 1: In a measuring cup or bowl, dissolve the beef bouillon in the water. Set aside.
Step 2: Melt the butter in a large skillet over medium heat. Sprinkle the flour over the melted butter, whisking constantly until a smooth paste forms. Cook for 1 minute, continuing to whisk so the roux cooks evenly without browning.
Step 3: Slowly pour the prepared beef bouillon into the skillet while whisking constantly to keep the gravy smooth and free of lumps.

Step 4: Whisk in the onion powder and granulated garlic. Continue cooking over medium heat, whisking frequently, until the gravy thickens enough to coat the back of a spoon. Reduce the heat to low to keep the gravy warm.
Step 5: Heat a separate skillet over medium-high heat. Shape the ground beef into two oblong patties that will span the bread. Season with salt, coarse black pepper, and granulated garlic as they cook. Cook to your preferred doneness.
Step 6: Cut each slice of bread in half. Arrange four bread halves on each of two serving plates, slightly overlapping them to create a base for the hamburger patties.
Step 7: Place one hamburger patty on each bed of bread. Ladle the hot gravy generously over the patties and bread, then serve immediately while hot.
Top tips
- Avoid overworking the beef: Mix and shape the ground beef just until it holds together. Overhandling compresses the meat, making the burgers firmer and less juicy after cooking.
- Don’t press the burgers: Once the patties are in the hot skillet, resist the urge to press on them with a spatula. Pressing forces flavorful juices out of the meat instead of keeping them in the burger.
- Use a heavy skillet: Cast iron or heavy stainless steel holds heat more evenly than thin cookware, helping the burgers cook evenly from edge to edge.
- Adjust gravy consistency: Brown gravy continues to thicken as it sits. If it becomes thicker than you’d like, whisk in a splash of hot beef broth until it reaches a smooth, pourable consistency.
- Assemble just before serving: Assemble the sandwiches immediately before bringing them to the table. Pouring the gravy over the bread too early allows it to soak in, while serving right away keeps the bread tender without becoming overly saturated.

Instructions
- In a measuring cup, dissolve the beef bouillon in the hot water and set aside.

- Gradually whisk in the prepared beef bouillon until smooth.
