Fresh blueberries, honey, and lemon come together in a crisp, sparkling lemonade with bright citrus flavor, natural berry sweetness, and refreshing bubbles.
Combine the blueberries, honey, and water in a medium saucepan. Bring to a gentle simmer over medium heat and cook for 10 to 15 minutes, stirring occasionally. Gently crush the blueberries as they soften.
Strain the mixture through a fine-mesh sieve into a bowl or measuring cup. Press lightly on the berries to extract the syrup, then discard the solids. Let the syrup cool completely.
Juice the lemons through a fine-mesh sieve into a bowl. Discard the seeds and stir the pulp back into the juice.
Stir the cooled blueberry syrup into the lemon juice to make the concentrate.
For a pitcher, pour the concentrate into a pitcher filled with ice and add 8 cups club soda. Stir gently to combine.
For individual servings, add 3 to 4 ounces of concentrate to a 10-ounce glass filled with ice. Top with club soda and stir gently.
Garnish with fresh blueberries and lemon slices, if desired, and serve immediately.
Notes
Frozen blueberries can be used to make the concentrate.
Can also be made with raspberries, blackberries, strawberries, or a combination of berries.
Mix the concentrate with club soda just before serving to preserve the carbonation.
For a still blueberry lemonade, replace the club soda with an equal amount of cold water.
Store the concentrate in an airtight container in the refrigerator for up to 1 week.
