These creamy garlic scallops are tender, buttery, and served in a rich garlic cream sauce with white wine, fresh lemon juice, and dill. A restaurant-style seafood dinner ready in just 20 minutes.
Dry the scallops thoroughly with paper towels and season with salt and pepper.
Heat a large cast iron skillet over medium-high heat. Add the olive oil and 1 tablespoon of the butter.
Arrange the scallops in a single layer and cook for 1–2 minutes per side, until opaque and tender. Transfer to a plate.
Reduce the heat to medium and add the remaining tablespoon of butter. Add the minced garlic and cook for about 30 seconds, stirring constantly.
Pour in the white wine and simmer gently for 30 seconds.
Stir in the heavy cream and simmer gently for 2–3 minutes, until slightly thickened. Remove from the heat and stir in the lemon juice and most of the fresh dill. Season to taste.
Return the scallops and any accumulated juices to the skillet. Gently coat with the garlic cream sauce, warming briefly if needed. Garnish with remaining dill. Serve immediately.
Notes
Scallops cook quickly. Watch for an opaque appearance and tender texture to avoid overcooking.
Keep the sauce at a gentle simmer to prevent the cream from separating. If it becomes too thick, add a splash of heavy cream to loosen it.
Replace the white wine with an equal amount of chicken broth if desired.
Refrigerate leftovers in an airtight container for up to 2 days. Freezing is not recommended.
Warm gently in a skillet over low heat, adding a splash of heavy cream if needed to loosen the sauce.
