This cranberry simple syrup is made with just three ingredients for a sweet-tart syrup with bright fresh cranberry flavor. It's perfect for sweetening coffee, tea, lemonade, cocktails, and mocktails or drizzling over pancakes, cheesecake, and ice cream.
Combine the water and sugar in a small saucepan. Cook over medium heat, stirring occasionally, until the sugar has completely dissolved. Do not let the mixture boil.
Add the cranberries and bring the syrup to a gentle simmer. Cook for 8–10 minutes, or until most of the cranberries have burst.
Lightly crush the cranberries with a potato masher, then remove the saucepan from the heat and let the mixture steep for 15–30 minutes.
Strain the syrup through a fine-mesh sieve into a heatproof measuring cup or bowl, pressing lightly on the solids to extract as much syrup as possible. Discard the solids.
Cool the syrup completely, then transfer it to a clean glass jar or bottle with a tight-fitting lid. Refrigerate until ready to use.
Notes
Steep the crushed cranberries for the full 30 minutes if you prefer a stronger cranberry flavor.
Warm syrup flows more easily through a fine-mesh sieve, making it easier to extract as much syrup as possible.
Refrigerate the syrup in a clean glass jar or bottle with a tight-fitting lid for up to 1 month. Shake gently before using if any natural settling occurs.
Freeze the syrup in an airtight freezer-safe container or ice cube trays for up to 3 months. Thaw overnight in the refrigerator before using.
