Instructions
Whisk dry ingredients:
Combine flour and salt in a mixing bowl until evenly blended.
Add wet ingredients:
Make a well in the flour and pour in the water and melted butter, then stir until dough forms.
Rest the dough:
Cover and let sit for 15 minutes to allow the flour to fully hydrate so it’s easier to roll out.
Divide and roll:
Split the dough in half and roll each piece to about 1/8" thick on a floured surface.
Trim and cut:
Trim the edges into a square, then cut into smaller squares. Reroll scraps to make more crackers.
Prepare to bake:
Place cut crackers on a lined baking sheet.
Brush with egg wash:
Beat an egg with 2 tablespoons of warm water, then brush over the crackers.
Add the topping:
Mix cinnamon and sugar together, then sprinkle generously over the crackers.
Bake the crackers:
Bake at 350°F (175°C) for 20 minutes.
Cool before serving:
Leave on the pan to cool so they firm up nice and crisp.
Notes
Melt the butter early:
Let it cool a bit so it blends smoothly into the dough.
Roll the dough thin:
The thinner you go, the crispier the crackers will bake up.
Split the dough in half:
Smaller portions make it easier to roll everything out evenly.
Brush lightly with egg wash:
A thin coat helps the cinnamon sugar cling without getting too clumpy.
Cover generously with topping:
