This creamy sausage and pepper soup recipe is easy to make. You only need one pot to make it, and it can be on the table in just 30 minutes.

I feel confident calling this tasty soup classic comfort food. It definitely has that ‘stick to your ribs’ quality that’s so satisfying on a chilly day.

If you’re a fan of a good sausage and pepper sandwich, you’re going to love this soup. It’s pretty much exactly that, served in a thick, creamy broth that has just the slightest hint of tomato flavor.

It makes a hearty lunch. But it can just as easily act as the star of the show on your dinner table.

Ingredients Needed To Make This Recipe

The ingredients in this creamy sausage and pepper soup are pretty basic. You likely have most of them in your kitchen already.

Here’s a list of the ingredietns needed to make this recipe …

  • SAUSAGE – Sweet Italian sausage is my preferred choice for this soup.
  • OLIVE OIL – Just a bit of extra virgin olive oil is all you need for this recipe.
  • ONION – I used yellow onion to make this recipe. Any type of onion will work well.
  • BELL PEPPER – Red, orange, or yellow bell peppers are preferred for this soup, as they are sweeter. If you prefer the taste of green bell peppers, go ahead and substitute them.
  • GARLIC – I chopped garlic bulbs to make my soup. Granulated garlic can be used if that’s all you have.
  • CRUSHED RED PEPPER – Good quality crushed red pepper is recommended for this recipe.
  • FLOUR – All-purpose white flour is used to make this recipe, organic is preferred.
  • DICED TOMATOES – An unseasoned can of high quality diced tomatoes is used to make this soup.
  • CHICKEN BROTH – Farm fresh chicken broth is preferred for this soup. Because I don’t have that available to me right now, I use better than bouillon paste to make my broth.
  • HALF AND HALF – Organic half and half is preferred to make this recipe.

Choosing Sausage For This Dish

I prefer to use sweet Italian sausage in my creamy sausage and pepper soup. I like the way it contrasts with the spice of the crushed red pepper.

But I have used other meats on occasion. Sometimes, a girl has to improvise to get it done!

I’ve substituted bratwurst with great success. I’ve used hot Italian sausage too. If you decide to go that route, you may want to eliminate the crushed red pepper. It can get too spicy really quick.

I even used kielbasa once when that’s all I had in the house. It was pretty delicious. I wouldn’t hesitate to use it again.

How To Make Creamy Sausage And Pepper Soup

One of the really great features of creamy sausage and pepper soup is that it can be on the table is just 30 minutes.

It doesn’t need to simmer like most soups. The sausage is powerful enough to flavor the whole pot of soup in just minutes.

To make this soup you will brown the sausage in a pot, and then add the onions and spices. You’ll cook this until the onions are semi-translucent.

Then you’ll add the bell peppers and cook for just a few minutes.

Next, you’ll sift in the flour and quickly stir the mixture well.

The diced tomatoes and chicken broth are poured in next, and the whole pot is simmered until the vegetables are nice and soft.

Finally, the half and half is stirred in and allowed just a few minutes to warm through.

And that’s all there is to it … you’ve got a great pot of soup!

Soups are so easy to make. And they are a really great way to serve up a steaming bowl of nutrients to your friends and family.

Variations For This Dish

One of the easiest, and tastiest, ways to switch this soup up when you’re wanting something just a little different, is to add pasta or rice.

You should cook this separately, and then add it to your soup bowl as you serve it. Otherwise, it will soak up all of the broth and you will end up with more of a casserole than a soup.

I’ve also used gnocchi in this soup. It’s really fantastic and I highly recommend it!

Adding cheese to the pot is another great way to switch things up a bit. Any one of your favorite cheeses will do. Personally, I prefer pepper jack or asiago.

Each of those lends it’s own unique flavor, both are delicious. Choose your cheese according to the desire of your tastebuds in the moment.

If you want a bit of cheese flavor, but not too much, garnish your bowl instead of adding it to your pot.

Substituting a spaghetti sauce for the diced tomatoes in this recipe gives it a completely different flavor. I like to do this when I serve it with pasta, especially a hearty pasta like rigatoni or penne rigate.

When I make this soup with red sauce, I garnish it with mozzarella cheese and serve it with a side of homemade garlic bread.

How To Serve Creamy Sausage And Pepper Soup

For me, there is no better way to serve creamy sausage and pepper soup than with a big hunk of homemade garlic bread. This soup is somehow even more suited to a side of toasty bread than other soups seem to be.

And we all know that soup and bread are a very good thing.

However, I’m sure there are some soup and cracker fans out there who will prefer to serve it that way. So, go ahead and do what works for you. I’m going to just sit over here all content with my bread.

This soup’s thick, creamy sauce makes an amazing pasta sauce, and I encourage you to serve it atop a plate of linguine one evening.

It really makes a hearty cold weather meal, that is particularly satisfying at the end of the day. Especially, if you’ve been outdoors and you want to chase the chill from your bones.

Storing Creamy Sausage And Pepper Soup

While creamy sausage and pepper soup is really terrific straight from the pot, it is even better after it sits in the refrigerator for a day or two. But then, all soup is like that, isn’t it?!?!

It will last in your refrigerator for 5-7 days without a problem.

Unfortunately, because of the cream content, this soup doesn’t freeze very well in it’s finsihed form. The cream will break apart when you reheat it after it’s been frozen.

However, if you want to make a pot to store in the freezer, you can do that by leaving the cream out of the mix until you reheat it.

This works well, and it’s pretty effortless to do.

Ingredients

  • 2 tbls olive oil
  • 1 lb sweet Italian sausage
  • 1 onion, medium size, cut in 2-3" strips
  • 2 cloves garlic, large, minced
  • 1/4-1/2 tsp crushed red pepper, to taste
  • 2 bell peppers, tri-color, cut in 2-3" strips
  • 1 can diced tomatoes
  • 6 tbls flour, all-purpose white
  • 2 c chicken broth
  • 1 c half and half

Instructions

  1. Heat olive oil in a soup pot.
  2. Add sausage and partially brown it.
  3. Add onion, garlic, and crushed red pepper and cook until onion is semi-translucent.
  4. Add bell peppers and cook for 5 minutes.
  5. Stir in diced tomatoes.
  6. Sift in flour, 1/3 at a time, stirring between each addition.
  7. Add chicken broth and stir well.
  8. Cook until vegetables are tender.
  9. Stir in half and half.
  10. Serve.
